Ingredients
  

For the Patties
  • 2 cups cooked leftover rice fresh rice can be used when cooled
  • 1 large egg substitute with a flax egg or aquafaba for a vegan option
  • 1 medium onion swap with shallots or green onions for a milder taste
  • 2 cloves garlic or garlic powder if fresh isn't available
  • 1/4 cup fresh parsley or substitute with cilantro or dill
  • 1 cup grated cheddar cheese mozzarella or dairy-free cheese can also work
  • 1/2 cup Greek yogurt can be replaced with sour cream or a non-dairy alternative
  • 1 medium red bell pepper any color bell pepper works or can be omitted
  • to taste salt essential for seasoning
  • to taste black pepper essential for seasoning
  • 1 teaspoon smoked paprika replace with regular paprika or chili powder as needed
  • 1 tablespoon lime juice lemon juice is a suitable alternative
  • 1/2 cup all-purpose flour use rice flour for a gluten-free option
  • 2 tablespoons olive oil or coconut or avocado oil

Method
 

Making the Patties
  1. Mix together the leftover cooked rice, chopped onion, grated cheese, beaten egg, fresh parsley, minced garlic, and diced red bell pepper in a large bowl until well mixed.
  2. Stir in the Greek yogurt, lime juice, salt, black pepper, and smoked paprika until evenly distributed.
  3. Gently fold in the all-purpose flour to bind the mixture, being careful not to overmix.
  4. Form the mixture into 8 equal-sized patties, each about ½ inch thick.
  5. In a non-stick skillet, heat olive oil over medium heat until shimmering.
  6. Carefully add the patties to the skillet in batches, frying for about 3-4 minutes on each side until golden brown and crispy.
  7. Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
  8. Serve hot, optionally garnished with fresh parsley.
