Making the Patties
- Mix together the leftover cooked rice, chopped onion, grated cheese, beaten egg, fresh parsley, minced garlic, and diced red bell pepper in a large bowl until well mixed.
- Stir in the Greek yogurt, lime juice, salt, black pepper, and smoked paprika until evenly distributed.
- Gently fold in the all-purpose flour to bind the mixture, being careful not to overmix.
- Form the mixture into 8 equal-sized patties, each about ½ inch thick.
- In a non-stick skillet, heat olive oil over medium heat until shimmering.
- Carefully add the patties to the skillet in batches, frying for about 3-4 minutes on each side until golden brown and crispy.
- Transfer the cooked patties to a paper towel-lined plate to absorb excess oil.
- Serve hot, optionally garnished with fresh parsley.
