Preparation
- Preheat the oven to 350°F.
- Mix the honey-mustard butter by combining dijon mustard, salted butter, and honey in a small bowl. Microwave for about 20 seconds, then stir until well blended.
- Slice the large croissants in half horizontally using a serrated knife.
- Brush the insides with the honey-mustard butter mixture.
- Layer the bottom halves of the croissants starting with a slice of cheese, followed by a portion of ham, bacon, and another slice of cheese.
- Cap with the top halves.
- Arrange on a baking sheet and bake for 10-15 minutes.
- Whisk the eggs with milk, salt, and pepper in a bowl. Cook in a skillet over medium heat for 2-3 minutes.
- Open the tops of the baked sandwiches and distribute the scrambled eggs evenly.
- Garnish with fresh chives if desired.
