- Preheat the oven to 425°F (220°C).
- Slice the green cabbage into thick wedges or strips, rinse under cool water and pat dry.
- In a large mixing bowl, toss the cabbage with olive oil, ground turmeric, cumin seeds, ground coriander, red chili powder, salt, and black pepper.
- Spread the seasoned cabbage in a single layer on a parchment-lined baking sheet.
- Roast the cabbage for 20–25 minutes, flipping halfway through.
- Remove from the oven and drizzle with fresh lemon juice.
- If desired, sprinkle chopped fresh cilantro over the roasted cabbage before serving.
