Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Slice the green cabbage into thick wedges or strips, rinse under cool water and pat dry.
  3. In a large mixing bowl, toss the cabbage with olive oil, ground turmeric, cumin seeds, ground coriander, red chili powder, salt, and black pepper.
  4. Spread the seasoned cabbage in a single layer on a parchment-lined baking sheet.
  5. Roast the cabbage for 20–25 minutes, flipping halfway through.
  6. Remove from the oven and drizzle with fresh lemon juice.
  7. If desired, sprinkle chopped fresh cilantro over the roasted cabbage before serving.
