Ingredients
  

For the Filling
  • 1 cup Corned Beef finely chopped
  • 1 cup Sauerkraut well-drained
  • 1 cup Swiss Cheese shredded
  • 1 cup Mashed Potatoes leftover preferred
For the Coating
  • 2 large Eggs beaten
  • 1 cup All-Purpose Flour
  • 1 cup Breadcrumbs panko recommended
For Frying
  • 4 cups Neutral Oil heated to 350°F (175°C)
For the Dipping Sauce
  • 1 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 2 tablespoons Pickle Relish
  • 1 tablespoon Hot Sauce or Sriracha adjust to taste
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder

Method
 

Preparation
  1. Finely chop the corned beef and drain the sauerkraut well.
  2. In a large bowl, mix the chopped corned beef, sauerkraut, mashed potatoes, and Swiss cheese until combined.
  3. Form the mixture into golf ball-sized orbs and chill on a lined baking tray for 30 minutes.
  4. Prepare a dredging station with separate bowls for flour, beaten eggs, and breadcrumbs.
  5. Roll each ball in flour, dip into the egg, and coat with breadcrumbs.
  6. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the balls in batches for 3-4 minutes until golden brown.
  7. Drain fried Reuben Balls on a wire rack or paper towels.
  8. In a separate bowl, whisk together mayonnaise, ketchup, relish, hot sauce, paprika, and garlic powder for the dipping sauce.
  9. Serve hot with the spicy Thousand Island dipping sauce.
