  • 3 tbsp Soy sauce Essential for marinating
  • 1 tbsp Dark soy sauce Can be swapped with regular soy sauce
  • 1 tbsp Oyster sauce Use mushroom sauce for a vegetarian alternative
  • 1 tsp Black pepper powder Adjust based on spice preference
  • 1 tbsp Cornstarch Creates a light coating on the chicken
For Cooking
  • 1 tbsp Oil Vegetable or sesame oil for frying
For Garnish
  • 3 stalks Scallion (spring onions) Include both green and white parts for best flavor

Method
 

How to Make Scallion Chicken
  1. In a bowl, combine chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and cornstarch. Mix well and let the chicken marinate for about 10 minutes.
  2. In a non-stick pan, heat a tablespoon of vegetable or sesame oil over medium heat.
  3. Add the marinated chicken to the pan, spreading it out evenly. Cook for about 6-8 minutes, turning once, until fully cooked and golden brown.
  4. Stir in the white parts of the scallions, cooking until softened (about 2 minutes). Then add the green parts and stir for 10-20 seconds.
  5. Plate the scallion chicken and garnish with additional pepper or sliced scallions, if desired. Serve with rice or noodles.
