  • 2 cups masarepa use masarepa instead of masa harina
  • 1 teaspoon salt fine sea salt for even distribution
  • 1 cup milk use warm milk for smoother consistency
  • ½ cup water add more if too dry
  • 2 tablespoons butter melted for best blending
For the Filling
  • 1 cup queso fresco can substitute with cotija or feta
  • 1 cup mozzarella adds gooey melt

Basic Preparation
  1. Prepare the Dough: In a bowl, combine 2 cups of masarepa with 1 teaspoon of salt. Warm 1 cup of milk, ½ cup of water, and 2 tablespoons of butter, then stir these into the cornmeal mixture. Let the dough rest for about 5 minutes.
  2. Shape and Fill: Roll the dough into balls, flatten each ball slightly, add a pinch of cheese in the center, then fold and reshape to encase the cheese.
  3. Cook the Arepas: Preheat a griddle to 350°F. Cook each flattened ball for 4 minutes on each side until golden brown and crispy.
  4. Rest and Serve: Let the cooked arepas sit for about 3 minutes before serving to allow the cheese to set.
