Basic Preparation
- Prepare the Dough: In a bowl, combine 2 cups of masarepa with 1 teaspoon of salt. Warm 1 cup of milk, ½ cup of water, and 2 tablespoons of butter, then stir these into the cornmeal mixture. Let the dough rest for about 5 minutes.
- Shape and Fill: Roll the dough into balls, flatten each ball slightly, add a pinch of cheese in the center, then fold and reshape to encase the cheese.
- Cook the Arepas: Preheat a griddle to 350°F. Cook each flattened ball for 4 minutes on each side until golden brown and crispy.
- Rest and Serve: Let the cooked arepas sit for about 3 minutes before serving to allow the cheese to set.
