Preparation
- Thaw puff pastry by leaving it in the refrigerator overnight.
- Prepare the Date & Tamarind Chutney by soaking the dates, then blending them with tamarind paste, spices, and a little water until smooth.
- Make the Chili Garlic Chutney by blending fresh garlic, Kashmiri red chili powder, lime juice, sugar, salt, and water until smooth.
- Chop the roasted peanuts and mix them with a bit of oil and chili powder.
Assembly
- Create the Dabeli Filling by steaming and mashing the potatoes, then mixing in spices, melted butter, and a dollop of chutney.
- Assemble the Pinwheels by rolling out the thawed puff pastry, spreading a layer of chili garlic chutney, adding the filling, and sprinkling the masala peanuts. Roll tightly and slice into rounds.
- Chill the pinwheels in the refrigerator for at least 15 minutes.
- Bake or air fry your pinwheels until golden brown and crispy.
Serving
- Serve your pinwheels garnished with chopped red onion, cilantro, pomegranate seeds, and sev, alongside extra chutneys for dipping.
