Ingredients
  

For the Pinwheels
  • 1 sheet Puffed Pastry Substitute with pre-made pie crust if desired.
  • 2 large Potatoes Or 3 medium-sized for the perfect texture.
For the Chutneys
  • 1 cup Dates Adds natural sweetness to the chutney.
  • 2 tablespoons Tamarind Paste Crucial for signature flavor.
  • 2 cloves Garlic Fresh garlic enhances flavor.
  • 2 tablespoons Lime Juice Use freshly squeezed for best taste.
For the Spices and Seasoning
  • 1 teaspoon Kashmiri Red Chili Powder Use regular chili powder for more spice.
  • 1 teaspoon Cumin Seed Powder Freshly ground is best.
  • 1 teaspoon Kala Namak Substitute with kosher salt if unavailable.
  • 2 tablespoons Melted Butter Unsalted is preferred.
For Garnishing
  • 1/4 cup Roasted Peanuts Substitute with seeds for nut-free.
  • 1 small Red Onion Switch to green onions if needed.
  • 1/4 cup Pomegranate Seeds Optional but recommended for presentation.
  • 1/2 cup Sev Omit for a lighter version.

Method
 

Preparation
  1. Thaw puff pastry by leaving it in the refrigerator overnight.
  2. Prepare the Date & Tamarind Chutney by soaking the dates, then blending them with tamarind paste, spices, and a little water until smooth.
  3. Make the Chili Garlic Chutney by blending fresh garlic, Kashmiri red chili powder, lime juice, sugar, salt, and water until smooth.
  4. Chop the roasted peanuts and mix them with a bit of oil and chili powder.
Assembly
  1. Create the Dabeli Filling by steaming and mashing the potatoes, then mixing in spices, melted butter, and a dollop of chutney.
  2. Assemble the Pinwheels by rolling out the thawed puff pastry, spreading a layer of chili garlic chutney, adding the filling, and sprinkling the masala peanuts. Roll tightly and slice into rounds.
  3. Chill the pinwheels in the refrigerator for at least 15 minutes.
  4. Bake or air fry your pinwheels until golden brown and crispy.
Serving
  1. Serve your pinwheels garnished with chopped red onion, cilantro, pomegranate seeds, and sev, alongside extra chutneys for dipping.
