  • 1 teaspoon Thyme Fresh or dried.
  • 1 tablespoon Worcestershire Sauce Use gluten-free if needed.
  • 1 tablespoon White Wine Vinegar For acidity.
For Garnishing
  • 2 tablespoons Fresh Parsley Chopped.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and season with kosher salt and black pepper.
  3. In an oven-safe skillet, heat olive oil and sear the pork for 3-4 minutes on each side.
  4. Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes until internal temperature reaches 145°F (63°C).
  5. Remove the pork from the oven and let it rest for 5-10 minutes.
  6. In the same skillet, sauté chopped shallot for 2-3 minutes until soft.
  7. Add heavy cream, Dijon mustard, thyme, Worcestershire sauce, and white wine vinegar and simmer for 3-5 minutes until sauce thickens.
  8. Adjust seasoning with salt and pepper as needed.
  9. Slice the rested pork tenderloin into medallions.
  10. Drizzle the creamy Dijon sauce over the pork and garnish with fresh parsley.
