Making the Cookies
- Preheat oven to 350°F (175°C).
- Cream butter and sugar until light and fluffy, about 3-4 minutes.
- Incorporate eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Combine flour, baking powder, and salt in a separate bowl. Gradually fold into creamed mixture until just combined.
- Roll dough into small balls and place on parchment-lined baking sheet with space in between.
- Create an indentation in each ball and fill with peach preserves and cinnamon.
- Bake for about 15 minutes, or until edges are lightly golden. Allow cookies to cool before transferring to a wire rack.
- Optional: Dust with powdered sugar for an extra touch of sweetness.
