For the Filling
  • 1 cup Peach preserves Fresh peach compote can work but may not hold its shape as well.
  • 1 teaspoon Cinnamon Leave it out for a simpler flavor profile.
For the Baking
  • 1 teaspoon Baking powder Ensure it’s fresh for optimum results.
  • 1 teaspoon Salt Just a pinch enhances the overall flavor.

Method
 

Making the Cookies
  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy, about 3-4 minutes.
  3. Incorporate eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Combine flour, baking powder, and salt in a separate bowl. Gradually fold into creamed mixture until just combined.
  5. Roll dough into small balls and place on parchment-lined baking sheet with space in between.
  6. Create an indentation in each ball and fill with peach preserves and cinnamon.
  7. Bake for about 15 minutes, or until edges are lightly golden. Allow cookies to cool before transferring to a wire rack.
  8. Optional: Dust with powdered sugar for an extra touch of sweetness.
