Ingredients
  

For the Stuffing
  • 1 pound Fresh Calamari cleaned and ready to be stuffed
  • 1 cup Cooked Rice or quinoa for a gluten-free twist
  • 1 pound Italian Sausage or turkey sausage for a lighter option
  • 1/2 cup Grated Parmesan Cheese or nutritional yeast for a dairy-free option
  • 1/2 cup Breadcrumbs or crushed gluten-free crackers
  • 1/4 cup Chopped Fresh Parsley
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Red Pepper Flakes optional
  • to taste Salt and Pepper
For the Sauce
  • 2 cups Marinara Sauce
  • 2 tablespoons Olive Oil for sautéing

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) to prepare it for baking.
  2. In a skillet, heat a splash of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the Italian sausage to the skillet, breaking it up. Cook until browned, around 5-7 minutes.
  4. In a mixing bowl, combine the cooked rice, sautéed sausage and garlic, grated Parmesan, breadcrumbs, parsley, oregano, red pepper flakes, salt, and pepper. Stir until well combined.
  5. Take each cleaned calamari tube and carefully fill with the stuffing mixture, packing it tightly but leaving the ends open. Secure with toothpicks.
  6. Place the stuffed calamari in a baking dish. Pour marinara sauce over the top, covering each piece. Cover tightly with aluminum foil.
  7. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until tender and the sauce is bubbling.
  8. Once ready, let the calamari rest for a few minutes. Serve with lemon wedges.

Notes
