Preparation Steps
  1. Slice the large yellow or sweet onions into ½-inch thick rings, separating them into sturdy layers for stuffing.
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, and any optional add-ins you desire. Chill for about 10 minutes.
  3. Fill each onion ring generously with the creamy mixture, smoothing edges to keep the filling secure.
  4. Arrange the stuffed rings on a parchment-lined tray and freeze for 20–30 minutes to maintain shape during frying.
  5. Dredge each ring in all-purpose flour, dip in beaten eggs, and coat in seasoned breadcrumbs. For more crunch, repeat the egg and breadcrumb steps.
  6. Heat oil in a deep pan to 350°F. Fry the rings in batches for 2–3 minutes on each side until golden brown and crispy.
  7. Remove from oil and place on paper towels to absorb excess oil. Serve hot, optionally with dipping sauces.
