- Slice the large yellow or sweet onions into ½-inch thick rings, separating them into sturdy layers for stuffing.
- In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, and any optional add-ins you desire. Chill for about 10 minutes.
- Fill each onion ring generously with the creamy mixture, smoothing edges to keep the filling secure.
- Arrange the stuffed rings on a parchment-lined tray and freeze for 20–30 minutes to maintain shape during frying.
- Dredge each ring in all-purpose flour, dip in beaten eggs, and coat in seasoned breadcrumbs. For more crunch, repeat the egg and breadcrumb steps.
- Heat oil in a deep pan to 350°F. Fry the rings in batches for 2–3 minutes on each side until golden brown and crispy.
