Preparation
  1. In a mixing bowl, combine chicken thighs with jerk seasoning and olive oil. Let the chicken marinate for at least 15 minutes to enhance flavors—up to 24 hours is even better for maximum taste.
  2. Preheat your grill to medium heat, and carefully place the pineapple slices on the grill. Grill them for 3-4 minutes on each side, until they are beautifully caramelized and have those lovely grill marks.
  3. Place the marinated chicken thighs on the grill. Cook for 6-7 minutes on each side or until they are fully cooked and the juices run clear.
  4. In a bowl, whisk together the coleslaw mix, mayonnaise, apple cider vinegar, honey (if using), salt, and pepper. Mix until everything is evenly coated.
  5. Grab your burger buns and layer on the grilled chicken thigh first, followed by the grilled pineapple slices. Scoop on a generous serving of coleslaw.
