How to Make Sugar Cookie Cups
  1. Preheat the oven to 350°F (175°C). Grease two muffin pans with nonstick spray.
  2. Cream together the softened salted butter and granulated sugar in a large bowl until light and fluffy.
  3. Add the large egg along with the vanilla and almond extracts. Beat until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and baking soda in a separate bowl.
  5. Gradually combine the dry ingredients into the wet mixture until a soft dough forms.
  6. Press about 2 tablespoons of cookie dough into each muffin cup, pressing up the sides.
  7. Bake for 12 minutes or until lightly golden. Let cool for at least 15 minutes before removing.
  8. Once cooled, use the back of a tablespoon to shape the centers into deeper cups.
  9. Make the frosting by beating softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and milk.
  10. Pipe or spoon the cream cheese frosting into each cookie cup. Add sprinkles if desired.
