Steps
  1. Blend the Marinade: Combine olive oil, lime juice, garlic, chipotle pepper, soy sauce, oregano, chili powder, kosher salt, cumin, and cilantro in a blender, then blend until smooth.
  2. Marinate the Steak: Pour the marinade over the flank steak, flipping a few times. Let marinate for at least 2 hours, or up to 24 hours.
  3. Heat the Skillet: Preheat your large cast iron skillet over medium-high heat.
  4. Add Avocado Oil: Drizzle in avocado oil into the heated skillet.
  5. Cook the Steak: Place the marinated steak in the skillet and cook for 4-5 minutes without moving it.
  6. Flip and Sear Again: Turn the steak and cook for an additional 4-5 minutes.
  7. Preheat Oven: While the steak is cooking, preheat your oven to 425°F for the fries.
  8. Prepare the Rutabaga: Peel and cut the rutabaga into small fry shapes, toss with avocado oil and a pinch of salt.
  9. Bake the Fries: Spread the rutabaga fries on a large baking sheet and bake for 15 minutes.
  10. Crisp the Fries: After 15 minutes, flip the fries and bake for an additional 8-10 minutes.
  11. Assemble the Dish: Arrange the crispy rutabaga fries, top with slices of cooked steak and any additional toppings.
  12. Melt the Cheese (Optional): Place fries on a pan, sprinkle shredded cheese on top, and broil for 30-60 seconds until melted.
