  • 2 large Eggs hard boiled and chopped
  • 1/3 cup Onion finely diced
  • 1/3 cup Celery thinly sliced or diced

  • 2/3 cup Mayonnaise full-fat or lighter version
  • 1 tbsp Apple cider vinegar adds delightful tang
  • 1 tbsp Dijon mustard for extra kick

Method
 

Preparation Steps
  1. Boil a pot of water with a tablespoon of salt. Add the cauliflower florets and simmer until very tender, about 5 minutes. Drain and let cool completely.
  2. In a small bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, paprika, sea salt, and black pepper. Whisk until smooth.
  3. In a large bowl, add the cooled cauliflower, diced onion, sliced celery, and chopped hard-boiled eggs.
  4. Pour the dressing over the combined ingredients and fold gently until everything is well-coated.
  5. If time allows, refrigerate the salad for at least 1 hour.
  6. Just before serving, sprinkle chives and additional paprika on top.
