  • 1 pound Brussels Sprouts halved

  • 2 cups Cooked Quinoa or Rice

How to Make Lemon Garlic Butter Cod Bowls
  1. Preheat your oven to 400°F (200°C).
  2. Toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
  3. Pat the cod fillets dry with paper towels.
  4. Blend melted butter, remaining olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, salt, and pepper in a bowl.
  5. Brush the cod fillets with the garlic butter mixture.
  6. Heat a skillet over medium-high heat. Sear the cod for 2-3 minutes on each side until golden brown and cooked through.
  7. On serving plates, create a base with quinoa or rice, then top with roasted Brussels sprouts and seared cod fillets.
  8. Garnish with fresh parsley and additional lemon zest if desired. Serve warm.
