  • 3 cloves Garlic Minced; increase for a stronger garlic flavor.
  • 1 large Lemon Zest and juice; an extra lemon can be added as per taste.
For the Sauce
  • 1 tbsp Cornstarch Mixed with 1 tbsp water; for thickening.

Method
 

Cooking Instructions
  1. Prepare the Rub: Mix dried thyme, oregano, parsley, salt, pepper, olive oil, minced garlic, lemon zest, and juice together until you achieve a sludgy consistency.
  2. Loosen Chicken Skin: Gently lift skin of the chicken and place most of the rub underneath it; save some for the outside.
  3. Stuff the Chicken: Insert used lemon halves inside the cavity to infuse more flavor.
  4. Place in Slow Cooker: Set the chicken on a rack, apply remaining rub on top, sprinkle with salt and pepper.
  5. Cook: Cover and slow cook on low for 5 hours or high for 3 hours until internal temperature reaches 75°C (165°F).
  6. Brown the Skin: Drizzle olive oil over the chicken and broil for 5-10 minutes until the skin is golden-brown.
  7. Make Lemon Sauce: Pour cooking juices into a saucepan, add cornstarch mixture, simmer until thickened.
