How to Make Loaded Baked Potato with Pulled Pork
- Preheat the oven to 400°F (200°C). Prepare your baking tray by lining it with foil or parchment paper.
- Wash the russet potatoes thoroughly under cold water and pat them dry. Prick each potato several times with a fork.
- Bake the potatoes for 45-60 minutes until tender; a fork should easily pierce the skin.
- Prepare your pulled pork while the potatoes are baking, reheating leftover pork as needed.
- Cut the baked potatoes open lengthwise, fluffing the insides with a fork.
- Fill each potato with pulled pork, top with shredded cheese, allowing it to melt slightly.
- Finish with sour cream, green onions, and jalapeños. Optional: drizzle with BBQ sauce.
