How to Make Loaded Baked Potato with Pulled Pork
  1. Preheat the oven to 400°F (200°C). Prepare your baking tray by lining it with foil or parchment paper.
  2. Wash the russet potatoes thoroughly under cold water and pat them dry. Prick each potato several times with a fork.
  3. Bake the potatoes for 45-60 minutes until tender; a fork should easily pierce the skin.
  4. Prepare your pulled pork while the potatoes are baking, reheating leftover pork as needed.
  5. Cut the baked potatoes open lengthwise, fluffing the insides with a fork.
  6. Fill each potato with pulled pork, top with shredded cheese, allowing it to melt slightly.
  7. Finish with sour cream, green onions, and jalapeños. Optional: drizzle with BBQ sauce.
