Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Shred the zucchini using a grater, squeezing out all excess moisture with a clean dish towel.
  3. In a large bowl, combine the ground chicken, shredded zucchini, shredded carrot, diced red bell pepper, diced onion, egg, panko breadcrumbs, garlic powder, cumin, oregano, paprika, turmeric, ketchup, salt, and black pepper.
  4. Form half of the meat mixture on the lined baking sheet into a rectangle or oval, about 10x6 inches.
  5. Add shredded cheddar cheese on top of this first half, then cover it with the remaining mixture.
  6. Brush the surface with ¼ cup of ketchup or BBQ sauce.
  7. Bake for 45 minutes to 1 hour until the internal temperature reaches 160-165°F.
  8. Let it cool for 5-10 minutes before slicing.
