Cooking Instructions
- Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Shred the zucchini using a grater, squeezing out all excess moisture with a clean dish towel.
- In a large bowl, combine the ground chicken, shredded zucchini, shredded carrot, diced red bell pepper, diced onion, egg, panko breadcrumbs, garlic powder, cumin, oregano, paprika, turmeric, ketchup, salt, and black pepper.
- Form half of the meat mixture on the lined baking sheet into a rectangle or oval, about 10x6 inches.
- Add shredded cheddar cheese on top of this first half, then cover it with the remaining mixture.
- Brush the surface with ¼ cup of ketchup or BBQ sauce.
- Bake for 45 minutes to 1 hour until the internal temperature reaches 160-165°F.
- Let it cool for 5-10 minutes before slicing.
