Making the Pie
- Preheat your oven to 350°F (175°C).
- Blend graham crackers into fine crumbs. Mix with melted butter and sugar, then press into a 9-inch pie pan.
- Chill the crust in the refrigerator for 10-15 minutes.
- In a blender, combine fresh mango, sweetened condensed milk, eggs, lemon zest, and vanilla extract. Blend until smooth.
- Pour the mango mixture into the chilled crust, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes until edges are set and center jiggles slightly.
- Let the pie cool at room temperature for 30 minutes, then refrigerate for at least 4 hours.
- Slice and serve with optional whipped cream on top.
