Cooking Instructions
- Fry the Bacon: Cut the bacon into 1-inch pieces and fry in a skillet over medium heat until crispy. Remove the bacon and set aside, leaving about ¼ cup of the delicious fat in the pan.
- Prepare the Chicken: In a bowl, mix together the cayenne pepper, garlic powder, white pepper, and a pinch of parsley. Season the chicken thighs thoroughly with this spice blend, then coat each piece in flour.
- Sear the Chicken: Heat the reserved bacon fat on high until it's shimmering. Add the seasoned chicken to the pan without stirring and cook for about 3 minutes until the bottom is golden brown. Flip the chicken and allow it to brown for another 3 minutes.
- Add the Glaze: Drizzle the maple syrup over the chicken and stir in the crispy bacon pieces. Let everything cook together on high heat for an additional 2 minutes.
- Incorporate the Bourbon: Carefully pour in the bourbon. Cover the skillet with a lid and let it bubble gently for 1-2 minutes, stirring to coat the chicken.
- Finish Cooking: Allow the chicken to simmer for another 2-3 minutes until the sauce has thickened. Serve hot over a bed of rice, garnishing with freshly chopped green onions.
