  • 1 pound Parsnips cut into uniform sticks
  • 2 tablespoons Olive Oil or Avocado Oil or any high smoke-point oil
  • 2 tablespoons Maple Syrup honey or agave can also be used
  • 1 tablespoon Fresh Thyme or 1 teaspoon dried thyme
  • Salt & Pepper to taste

Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the parsnips by peeling and cutting them into uniform sticks about 1-2 inches long.
  3. Combine parsnips in a mixing bowl with oil, maple syrup, thyme, salt, and pepper. Toss until well coated.
  4. Arrange the coated parsnips in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, tossing halfway through.
  6. Serve warm, optionally garnished with extra fresh thyme.
