For the Relish
  • 1 cup Cherry Tomatoes Use ripe tomatoes for best flavor.
  • 0.5 cup Kalamata Olives Choose high-quality olives.
  • 2 tablespoons Capers
  • 2 cloves Garlic Minced.
  • 1 teaspoon Dried Oregano Substitute with fresh oregano for a bolder taste.
For the Dressing
  • 2 tablespoons Olive Oil Use high-quality extra virgin.
  • 2 tablespoons Lemon Juice Always use fresh juice.
For the Finish
  • 2 tablespoons Fresh Parsley Chopped.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Place the cod fillets in a parchment-lined baking dish, season with salt and pepper, and drizzle half of the olive oil.
  3. In a mixing bowl, combine cherry tomatoes, kalamata olives, capers, minced garlic, lemon juice, oregano, and remaining olive oil. Toss well.
  4. Spoon the tomato-olive mixture evenly over the cod fillets.
  5. Bake for 15–18 minutes until the cod flakes easily.
  6. Remove from oven, top with chopped parsley, and serve warm.
