- Preheat your oven to 400°F (200°C).
- Place the cod fillets in a parchment-lined baking dish, season with salt and pepper, and drizzle half of the olive oil.
- In a mixing bowl, combine cherry tomatoes, kalamata olives, capers, minced garlic, lemon juice, oregano, and remaining olive oil. Toss well.
- Spoon the tomato-olive mixture evenly over the cod fillets.
- Bake for 15–18 minutes until the cod flakes easily.
- Remove from oven, top with chopped parsley, and serve warm.
