Method
 

Cooking Instructions
  1. Prep your ingredients by chopping the chicken breasts and vegetables into uniform pieces for even cooking.
  2. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat until it shimmers.
  3. Add the chopped chicken to the skillet and sear for about 5-7 minutes until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the red onion and minced garlic, sautéing for 1-2 minutes until fragrant.
  6. Incorporate the zucchini and red bell peppers, cooking for about 3-4 minutes until slightly tender.
  7. Stir in the cherry tomatoes, kalamata olives, and sun-dried tomatoes, cooking for another 2-3 minutes.
  8. Return the chicken to the skillet, sprinkle the dried herbs, and toss to combine.
  9. Add a squeeze of fresh lemon juice and crumble feta cheese on top just before serving.
