  • 3 cloves Garlic Freshly minced garlic is ideal.
For Seasoning
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Finish
  • 1/2 cup Parmesan Cheese Optional, can substitute with nutritional yeast for dairy-free.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Coat the chicken breasts in a baking dish with olive oil and minced garlic. Season with oregano, thyme, paprika, salt, and pepper.
  3. Layer sliced zucchini around the seasoned chicken.
  4. Bake for 35 minutes, or until chicken reaches 165°F (74°C).
  5. Add Parmesan cheese on top during the last 5 minutes of baking.
  6. Let it rest for a few minutes before serving.
