Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts Substitute with boneless, skinless chicken thighs for a juicier option.

For the Olive Oil Sauce
  • 2 tablespoons Olive Oil Use extra virgin olive oil for enhanced taste.
  • 1 teaspoon Dried Oregano Fresh oregano can be used if available.
  • 1 teaspoon Dried Basil
  • 1 teaspoon Garlic Powder
For the Flavor Boosters
  • 1 Juice and zest Lemon
  • 1 cup Chicken Broth
  • 1/2 cup White Wine Can be replaced with chicken broth.
For the Veggies
  • 1 can Artichoke Hearts
  • 1/2 cup Green Olives
  • 1 medium Red Onion
  • 3 cloves Fresh Garlic Minced
For the Finish
  • 2 tablespoons Fresh Parsley

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. Sear the chicken in a large ovenproof skillet with heated olive oil over medium-high heat for about 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. Sauté sliced red onion and minced garlic in the same skillet for about 2 minutes until fragrant.
  6. Stir in artichoke hearts and olives, cooking for an additional 2 minutes.
  7. Pour in chicken broth, white wine (if using), lemon juice, and zest, and simmer gently for a few minutes.
  8. Return the chicken to the skillet, spooning the sauce over each breast.
  9. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  10. Let rest for a few minutes before garnishing with fresh parsley and serving.
