Preparation Steps
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, oregano, basil, and garlic powder.
- Sear the chicken in a large ovenproof skillet with heated olive oil over medium-high heat for about 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set it aside.
- Sauté sliced red onion and minced garlic in the same skillet for about 2 minutes until fragrant.
- Stir in artichoke hearts and olives, cooking for an additional 2 minutes.
- Pour in chicken broth, white wine (if using), lemon juice, and zest, and simmer gently for a few minutes.
- Return the chicken to the skillet, spooning the sauce over each breast.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for a few minutes before garnishing with fresh parsley and serving.
