Preparation Steps
- In a medium bowl, gently toss together the chopped tomatoes, red onion, spinach, feta, mozzarella, and dried oregano.
- Lay out your tortillas and place about 1/3 cup of the prepared filling on one half of each tortilla. Fold the other half over.
- Preheat a skillet over medium heat and lightly oil the surface.
- Place the folded quesadillas in the skillet. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook the other side for an additional 3-4 minutes.
- Once cooked, allow the quesadillas to rest for 1 minute before cutting them into triangles and serving warm.
