  • 1 pound Shrimp Substitute with scallops or fish for a different flavor.
  • 2 cloves Garlic Fresh garlic preferred.
  • 2 tablespoons Olive Oil Substitute with avocado oil for a different flavor.
For the Sauce
  • 4 ounces Feta Cheese Can be replaced with goat cheese.
  • 1 teaspoon Dried Oregano Fresh oregano can be substituted.
  • 1 teaspoon Paprika Use smoked paprika for a deeper flavor.
  • 1/4 teaspoon Red Pepper Flakes Optional for heat.
  • to taste Salt Essential seasoning.
  • to taste Pepper Essential seasoning.
For the Freshness
  • 2 cups Cherry Tomatoes Can replace with diced regular tomatoes.
  • 1/4 cup Fresh Parsley Basil or cilantro can be used.
  • 2 tablespoons Lemon Juice Fresh lemon is best.
  • 2 wedges Lemon Wedges For garnish.

Method
 

Cooking Steps
  1. Rinse and dry the shrimp thoroughly for a great sear.
  2. In a large skillet, heat olive oil over medium heat until it shimmers.
  3. Sauté minced garlic in the skillet until fragrant, about 1 minute.
  4. Toss in the shrimp, season with salt, pepper, oregano, paprika, and red pepper flakes. Cook for 2-3 minutes per side until pink.
  5. Stir in cherry tomatoes and cook for another 2 minutes until slightly soft.
  6. Remove from heat and add crumbled feta, gently toss together.
  7. Fold in fresh parsley and squeeze lemon juice over the mix.
  8. Transfer to a serving platter and garnish with lemon wedges.
