Cooking Steps
- Rinse and dry the shrimp thoroughly for a great sear.
- In a large skillet, heat olive oil over medium heat until it shimmers.
- Sauté minced garlic in the skillet until fragrant, about 1 minute.
- Toss in the shrimp, season with salt, pepper, oregano, paprika, and red pepper flakes. Cook for 2-3 minutes per side until pink.
- Stir in cherry tomatoes and cook for another 2 minutes until slightly soft.
- Remove from heat and add crumbled feta, gently toss together.
- Fold in fresh parsley and squeeze lemon juice over the mix.
- Transfer to a serving platter and garnish with lemon wedges.
