Preparation Steps
- Prepare Ribs: Start by removing the membrane from the back of the ribs.
- Dry Rub: In a small bowl, combine salt, gochugaru, white pepper, and five spice powder. Rub this mixture on both sides of the ribs.
- Preheat Oven: Set your oven to 275°F (135°C). This will create the melt-in-your-mouth texture.
- Prepare Sauce: Mix the brown sugar, oyster sauce, hoisin sauce, honey, soy sauce, rice vinegar, Shaoxing wine, grated ginger, and grated garlic in a bowl.
- Apply Sauce: Brush a thin layer of sauce over the ribs, then wrap tightly in aluminum foil.
- Slow Roast: Place wrapped ribs in the oven and slow-roast for 2 to 3 hours.
- Increase Heat: Once tender, increase temperature to 450°F (230°C) for caramelization.
- Final Bake: Unwrap ribs, place on a foil-lined tray, brush with more sauce, and bake for an additional 10-15 minutes.
- Serve: Brush with remaining sauce and slice into portions.
