Gingerbread Men Preparation
- In a mixing bowl, whisk together the plain flour, baking powder, ground ginger, ground cinnamon, mixed spice, and ground cloves until well blended.
- In a separate bowl, beat the softened butter and brown sugar together with a mixer until light and fluffy.
- Add the large egg and vanilla extract to the butter-sugar mixture and mix until combined.
- Gradually drizzle in the molasses while mixing.
- Slowly incorporate the dry ingredients into the wet mixture in four batches, stirring until no flour is visible.
- Shape the dough into a disc, wrap it in cling film, and refrigerate for at least 2 hours.
- Preheat your oven to 375°F (190°C) and prepare baking trays lined with parchment paper.
- Divide the chilled dough, rolling it out to about 4mm thick and cut out gingerbread men shapes.
- Place the trays in the preheated oven and bake for 12-14 minutes.
- Once cooled completely, decorate your gingerbread men with royal icing and optional sprinkles.
