How to Make Mouthwatering Cornbread Cookies
  1. In a medium bowl, whisk together the all-purpose flour, cornmeal, baking soda, baking powder, and salt.
  2. In a large mixing bowl, beat cold, cubed butter with granulated sugar and honey until light and fluffy.
  3. Add the room temperature egg yolks and vanilla extract; mix until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, gently folding until cohesive.
  5. Portion the dough into small balls and roll in granulated sugar.
  6. Place the sugar-coated dough on a baking sheet and freeze for at least 2 hours.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Arrange the dough balls on the sheets and bake for about 12-15 minutes.
  9. Let the cookies cool on the sheets for a few minutes before transferring to wire racks.
