Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat, grated onion, minced garlic, salt, paprika, oregano, yogurt, and olive oil in a mixing bowl. Mix until well combined for about 2-3 minutes.
  3. Divide the meat mixture in half and place one half on a sheet of parchment paper.
  4. Shape the first half of the mixture into a thin, even rectangle, about 1/2 inch thick. Repeat with the second half.
  5. Roll the meat inside the parchment paper, creating a tight rope-like shape. Place it carefully on a baking sheet.
  6. Bake in the preheated oven for approximately 40 minutes or until cooked through, ensuring an internal temperature of 165°F.
  7. Cool the rolls slightly after baking, then unroll and break the meat apart into strips for serving.
  8. Squeeze fresh lemon juice over the meat strips and bake for an additional 5-10 minutes until slightly crispy.
  9. Serve your homemade doner kebab in warm pita or bowls, topped with your favorite veggies and a drizzle of garlic sauce.
