- Preheat your oven to 400°F (200°C).
- Combine the ground meat, grated onion, minced garlic, salt, paprika, oregano, yogurt, and olive oil in a mixing bowl. Mix until well combined for about 2-3 minutes.
- Divide the meat mixture in half and place one half on a sheet of parchment paper.
- Shape the first half of the mixture into a thin, even rectangle, about 1/2 inch thick. Repeat with the second half.
- Roll the meat inside the parchment paper, creating a tight rope-like shape. Place it carefully on a baking sheet.
- Bake in the preheated oven for approximately 40 minutes or until cooked through, ensuring an internal temperature of 165°F.
- Cool the rolls slightly after baking, then unroll and break the meat apart into strips for serving.
- Squeeze fresh lemon juice over the meat strips and bake for an additional 5-10 minutes until slightly crispy.
- Serve your homemade doner kebab in warm pita or bowls, topped with your favorite veggies and a drizzle of garlic sauce.
