Ingredients
  

For the Casserole
  • 1 can condensed cheddar cheese soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
For the Filling
  • 3 cups cooked, shredded chicken
  • 1 can black beans rinsed and drained
  • 1 cup whole kernel corn drained
  • 1 can fire-roasted diced tomatoes
  • 1 can diced green chilies
For the Topping
  • 3 cups crushed tortilla chips
  • 2 cups shredded Mexican cheese blend
Optional Garnishes
  • 1/4 cup fresh cilantro for garnish
  • 1/2 cup sour cream for serving
  • 1 cup tortilla chips for serving on the side
  • 2 pieces lime wedges for serving

Method
 

How to Make Mexican Chicken Casserole
  1. Preheat the oven to 350°F.
  2. Prepare the casserole dish by lightly spraying it with cooking spray.
  3. Combine the cheddar cheese soup, sour cream, garlic powder, cumin, chili powder, salt, and black pepper in a mixing bowl.
  4. Add the shredded chicken, black beans, corn, diced tomatoes, and green chilies to the mixture and gently stir.
  5. Line the bottom of the casserole dish with 1 ½ cups of crushed tortilla chips.
  6. Spread half of the chicken mixture evenly over the tortilla chips.
  7. Sprinkle 1 cup of shredded Mexican cheese blend over the chicken mixture.
  8. Top with the remaining 1 ½ cups of crushed tortilla chips.
  9. Spread the remaining chicken mixture over the top of the tortilla chips and press down gently.
  10. Top with the last cup of shredded Mexican cheese blend.
  11. Bake the casserole, uncovered, for 20 minutes until the cheese is melted and bubbly.
  12. Remove from the oven and let it rest for 5 to 10 minutes before serving.
  13. Portion and top with garnishes like cilantro, sour cream, tortilla chips, and lime wedges as desired.
