- Preheat your oven to 400°F.
- Rub the pork tenderloin with olive oil, salt, and pepper.
- In a hot skillet, sear the pork tenderloin for 2-3 minutes on each side.
- Transfer the seared pork to the oven and roast for 20-25 minutes until the internal temperature reaches 145°F.
- In the same skillet, add minced garlic and sauté until fragrant. Stir in Dijon mustard and heavy cream, let it simmer until thickened.
- Remove the pork from the oven, let it rest for 5 minutes, then slice and serve with the sauce.
