How to Make Slow Cooker Beef Curry
- Start by cutting 2 pounds of beef chuck into 1-inch pieces, trimming any excess fat.
- Finely chop one large onion and mince four cloves of garlic. Grate two tablespoons of fresh ginger.
- In your slow cooker, combine the chopped onion, minced garlic, grated ginger, and three diced tomatoes.
- Sprinkle in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir to coat the vegetables.
- Add the beef chunks to the slow cooker and mix well with the spices and vegetables.
- Pour in 1 ½ cups of beef broth and 1 cup of coconut milk. Stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- Garnish with chopped cilantro and serve with lemon wedges.
