How to Make Slow Cooker Beef Curry
  1. Start by cutting 2 pounds of beef chuck into 1-inch pieces, trimming any excess fat.
  2. Finely chop one large onion and mince four cloves of garlic. Grate two tablespoons of fresh ginger.
  3. In your slow cooker, combine the chopped onion, minced garlic, grated ginger, and three diced tomatoes.
  4. Sprinkle in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir to coat the vegetables.
  5. Add the beef chunks to the slow cooker and mix well with the spices and vegetables.
  6. Pour in 1 ½ cups of beef broth and 1 cup of coconut milk. Stir gently to combine.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  8. Garnish with chopped cilantro and serve with lemon wedges.
