Preparation
- Preheat the oven to 350°F. Wash and dry each bell pepper, then slice in half horizontally. Remove the tops.
- Arrange the halved bell peppers in a casserole dish. Brush each half with 1 Tbsp of cooking oil, then season with ¼ tsp of salt and pepper. Bake for 20 minutes.
- Heat a skillet over medium heat and add 1 Tbsp of cooking oil. Brown the Italian sausage for 5-7 minutes.
- Sauté the onion and garlic in the skillet until the onion is translucent.
- Combine rice, marinara sauce, Italian seasoning, garlic powder, salt, and chicken broth in the skillet. Mix well.
- Cover the skillet and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes.
- Fluff the rice mixture after 5 minutes of resting. Fill each bell pepper with the mixture.
- Top with mozzarella cheese and cover loosely with foil. Bake for another 15 minutes.
- Broil for 2-3 minutes until golden brown.
