For the Filling

  • 0.25 tsp black pepper Freshly cracked for enhanced flavor.
  • 1 lb Italian sausage Adds a rich, savory depth.
  • 1 piece yellow onion Diced for sweetness and texture.
  • 3 cloves garlic Minced for aroma.
  • 1 tsp Italian seasoning Infuses classic Italian flavors.
  • 0.5 tsp garlic powder
  • 1 cup marinara sauce Adds moisture and flavor.
  • 0.5 cup long grain white rice Do not cook beforehand.
  • 0.75 cup chicken broth Provides moisture for rice.
  • 1 cup mozzarella cheese Shredded for a gooey topping.

Method
 

Preparation
  1. Preheat the oven to 350°F. Wash and dry each bell pepper, then slice in half horizontally. Remove the tops.
  2. Arrange the halved bell peppers in a casserole dish. Brush each half with 1 Tbsp of cooking oil, then season with ¼ tsp of salt and pepper. Bake for 20 minutes.
  3. Heat a skillet over medium heat and add 1 Tbsp of cooking oil. Brown the Italian sausage for 5-7 minutes.
  4. Sauté the onion and garlic in the skillet until the onion is translucent.
  5. Combine rice, marinara sauce, Italian seasoning, garlic powder, salt, and chicken broth in the skillet. Mix well.
  6. Cover the skillet and bring the mixture to a boil. Reduce heat and let simmer for 20 minutes.
  7. Fluff the rice mixture after 5 minutes of resting. Fill each bell pepper with the mixture.
  8. Top with mozzarella cheese and cover loosely with foil. Bake for another 15 minutes.
  9. Broil for 2-3 minutes until golden brown.
