Method
 

Directions
  1. In a large bowl, combine the bread flour, kosher salt, and instant yeast. Stir gently to mix.
  2. Pour in the warm water and mix until a shaggy, sticky dough forms.
  3. Add 1 cup of shredded sharp cheddar cheese into the dough, folding it in gently.
  4. Cover the bowl and allow the dough to rise at room temperature for 12-18 hours.
  5. Preheat your oven to 450°F with the Dutch oven inside, 30 minutes before baking.
  6. Flour a clean surface and turn the dough out, shaping it into a loose ball.
  7. Place the dough on parchment dusted with cornmeal, sprinkle remaining cheese on top, and score the surface.
  8. Transfer the dough into the hot Dutch oven, cover it, and bake for 30 minutes.
  9. Remove the cover and continue to bake for an additional 15-20 minutes until golden brown.
  10. Let the bread cool on a rack for at least 30 minutes before slicing.
