How to Make No Sugar Cottage Cheese Carrot Cake Bars
- Blend the cottage cheese and pitted Medjool dates until smooth.
- In a medium bowl, combine the creamy mixture with eggs, applesauce, vanilla, and oil. Stir until incorporated.
- In a separate bowl, mix rolled oats, flour, baking powder, baking soda, spices, and salt. Fold in coconut and zest.
- Pour the wet mixture into the dry ingredients. Fold in the grated carrots and optional nuts.
- Preheat oven to 350°F (175°C). Line a baking pan with parchment, pour batter, and spread evenly. Bake for 30-35 minutes.
- Allow the bars to cool completely in the pan.
- Mix Greek yogurt, cream cheese, and sweetener until smooth. Spread over cooled bars.
- Slice the cooled bars into portions and enjoy!
