How to Make No Sugar Cottage Cheese Carrot Cake Bars
  1. Blend the cottage cheese and pitted Medjool dates until smooth.
  2. In a medium bowl, combine the creamy mixture with eggs, applesauce, vanilla, and oil. Stir until incorporated.
  3. In a separate bowl, mix rolled oats, flour, baking powder, baking soda, spices, and salt. Fold in coconut and zest.
  4. Pour the wet mixture into the dry ingredients. Fold in the grated carrots and optional nuts.
  5. Preheat oven to 350°F (175°C). Line a baking pan with parchment, pour batter, and spread evenly. Bake for 30-35 minutes.
