For the Dip
  • 1 cup Green Olives Castelvetrano or Manzanilla recommended
  • 4 oz Feta Cheese Block feta in brine
  • 4 oz Cream Cheese At room temperature
  • 2 tbsp Extra Virgin Olive Oil
  • 1 clove Garlic Minced
  • 1 tsp Lemon Zest Fresh
  • 1 tbsp Lemon Juice
  • 1 medium Roasted Red Pepper Chopped
  • 1 tsp Dried Oregano Dried preferred
  • 1/4 tsp Chili Flakes Optional
  • 1/4 tsp Black Pepper Freshly ground
For Garnish
  • 1/2 cup Whole Green Olives For garnish
  • 1 tbsp Olive Oil For drizzling

Instructions
  1. In a food processor, add the green olives, feta cheese, cream cheese, extra virgin olive oil, minced garlic, lemon zest, and lemon juice. Blend until smooth with a slight chunky texture (about 30 seconds).
  2. Add the chopped roasted red pepper, dried oregano, chili flakes, and freshly ground black pepper. Pulse 2-3 times to incorporate while keeping some texture.
  3. Scoop the dip into a serving bowl. Drizzle with olive oil and finish with whole green olives.
  4. Let the dip chill in the refrigerator for at least 30 minutes before serving.
