- Preheat the oven to 375°F (190°C).
- Season the raw shrimp with Cajun seasoning, onion powder, garlic powder, smoked paprika, salt, and pepper. Let it sit for 15 minutes.
- Heat olive oil in a skillet over medium-high heat. Sauté the shrimp until cooked through (2-5 minutes). Remove and set aside.
- Melt the butter in the same skillet; sauté the sliced onion for 2-3 minutes until translucent. Add minced garlic and cook until fragrant.
- Stir in chicken broth and rice, seasoning with Cajun seasoning, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until liquid is mostly absorbed.
- Cover the skillet with a lid and transfer to the oven. Bake for 12-15 minutes, or until rice is tender.
- Remove from the oven and let rest for 10 minutes. Stir in shrimp and garnish with green onions before serving.
