How to Make One Pot Creamy Tomato Pasta
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 chopped onion and 2 minced garlic cloves; sauté for about 2 minutes until they are softened and fragrant.
- Stir in 2 tablespoons of tomato paste and 1 teaspoon of Italian seasoning, cooking for an additional minute to bring out the flavors.
- Pour in 4 cups of chicken stock and 1 can (14.5 oz) of diced tomatoes; bring to a boil. Add 12 ounces of short pasta and season with salt and pepper, then reduce to a simmer.
- Simmer for 10-15 minutes until the pasta is tender, stirring occasionally.
- Remove from heat; stir in ½ cup of grated Parmesan and 4 oz of cream cheese until evenly combined. Let it sit for 3-4 minutes before serving.
