Ingredients

For the Rice Base
  • 1 cup Sushi Rice Short-grain rice can be used as a substitute.
  • 2 Tbsp Rice Vinegar Provides tanginess.
For the Filling
  • 1 lb Salmon Cooked and flaked.
  • 1 medium Avocado Slice into thin wedges or small cubes.
For Assembly
  • 4 sheets Nori (seaweed sheets) Optional; helps hold the bites together.
  • 1 cup Soy Sauce For dipping, use tamari for gluten-free.

Equipment

  • Oven
  • Baking Sheet
  • Parchment paper
  • Sharp knife

Method

Step-by-Step Instructions
  1. Start by cooking the sushi rice according to the package instructions. Once cooked, gently toss the rice with rice vinegar to impart a lovely tangy flavor. Allow it to cool slightly.
  2. Preheat your oven to 375°F (190°C). Season the salmon fillet with salt and pepper, place it on a parchment-lined baking sheet, and bake for 15-20 minutes until the salmon flakes easily with a fork.
  3. In a baking dish, create a layer of the sticky sushi rice, followed by flaked salmon and small avocado pieces. If using, place nori sheets on top. Cut into bite-sized squares or fun shapes for easy serving.
  4. Drizzle with soy sauce for dipping or serve alongside your favorite dipping sauce. These bites are best enjoyed warm, but they’re equally delightful at room temperature!
