For the Chicken
  • 1 large chicken breast or use rotisserie chicken
  • 1 tablespoon olive oil extra virgin olive oil enhances flavor
  • to taste salt
  • to taste pepper
For the BBQ Sauce
  • 1 cup homemade BBQ sauce made from low sugar ketchup, Worcestershire sauce, apple cider vinegar, and spices
For the Toppings
  • 2 each fresh ripe peaches can substitute with fresh pineapple or apples
  • 1/2 each red onion can use white onion if desired
  • 1 cup shredded mozzarella cheese freshly shredded gives better meltability
  • 1/4 cup fresh cilantro for garnish; can substitute with fresh basil

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix low sugar ketchup, Worcestershire sauce, apple cider vinegar, and spices to create the BBQ sauce.
  3. Drizzle olive oil over the chicken breast, adding salt and pepper. Bake for 25-30 minutes until cooked.
  4. Shred the chicken or toss rotisserie chicken in BBQ sauce.
  5. Thinly slice the peaches and dice the red onion.
  6. Spread BBQ sauce on the pizza crust and add cheese, chicken, peach slices, and onion.
  7. Bake in the oven for about 20 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro before serving.
