- Preheat your oven to 450°F while you prepare the dough.
- Line a baking sheet with parchment paper.
- Combine flour, baking powder, salt, and powdered sugar in a large bowl.
- Cut in the butter and shortening until the mixture resembles coarse crumbs.
- Fold in the diced peaches until they’re well-coated.
- Stir in the cold buttermilk gently until a soft, sticky dough forms.
- Sprinkle flour on a clean surface, then transfer the dough there. Knead gently, adding flour as needed.
- Pat the dough into a 1-inch thick rectangle. Fold it in thirds and repeat 2-3 times.
- Cut out biscuits with a floured cutter and place them on the baking sheet.
- Refrigerate them for 20 minutes.
- Brush the tops with the egg wash before baking for around 18 minutes.
- Prepare the glaze while biscuits bake.
- Brush the warm baked biscuits with melted butter and drizzle with glaze once cooled.
