- Cut cold butter into 12 small pieces, placing them evenly in the muffin cups, then sprinkle brown sugar over the butter. Arrange sliced peaches at the bottom.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Beat room temperature butter and granulated sugar together until light and fluffy, then add egg and vanilla.
- Combine flour mixture with buttermilk, alternating, and mix just until combined. Fold in cubed peaches.
- Fill the muffin cups evenly with the batter and bake for 25-30 minutes.
- Cool the cakes for about 5 minutes, then invert the pan to remove them.
