  • 1/2 teaspoon salt
  • 3/4 cup cold unsalted butter Use vegan butter for a dairy-free alternative.
  • 1/2 cup brown sugar Opt for dark brown sugar for a robust flavor.
For the Filling
  • 4 cups peaches Substitute with apples or nectarines as desired.
  • 1 cup heavy cream For a lighter option, use half-and-half or coconut cream.
  • 1 teaspoon ground cinnamon Nutmeg can be added for extra flavor.
Optional Topping
  • 1 cup old-fashioned oats or nuts For added crunch in the streusel topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C). Grease the baking pan or line it with parchment paper.
  2. Combine flour, granulated sugar, and salt in a food processor, blending briefly.
  3. Add cold butter and pulse until mixture resembles coarse crumbs. Reserve 1½ cups for topping.
  4. Press the remaining mixture into the bottom of the prepared pan to form the crust.
  5. Bake the crust for about 15 minutes, until slightly golden brown.
Making Topping and Filling
  1. Mix brown sugar into the reserved crumb mixture until clumps form for the streusel topping.
  2. In a bowl, combine granulated sugar, flour, cinnamon, and salt. Toss in chopped peaches.
  3. Pour in heavy cream and stir until well combined to make the filling.
Assembly and Baking
  1. Pour the peach filling over the pre-baked crust and spread evenly.
  2. Sprinkle the streusel topping generously over the filling.
  3. Bake for around 45 minutes, until topping is golden brown and juices are bubbling.
Cooling and Serving
  1. Let the bars cool completely on a wire rack before refrigerating for at least 2 hours.
  2. Serve warm topped with vanilla ice cream or chilled.
