Preparation
- Preheat your oven to 350°F (180°C). Grease the baking pan or line it with parchment paper.
- Combine flour, granulated sugar, and salt in a food processor, blending briefly.
- Add cold butter and pulse until mixture resembles coarse crumbs. Reserve 1½ cups for topping.
- Press the remaining mixture into the bottom of the prepared pan to form the crust.
- Bake the crust for about 15 minutes, until slightly golden brown.
Making Topping and Filling
- Mix brown sugar into the reserved crumb mixture until clumps form for the streusel topping.
- In a bowl, combine granulated sugar, flour, cinnamon, and salt. Toss in chopped peaches.
- Pour in heavy cream and stir until well combined to make the filling.
Assembly and Baking
- Pour the peach filling over the pre-baked crust and spread evenly.
- Sprinkle the streusel topping generously over the filling.
- Bake for around 45 minutes, until topping is golden brown and juices are bubbling.
Cooling and Serving
- Let the bars cool completely on a wire rack before refrigerating for at least 2 hours.
- Serve warm topped with vanilla ice cream or chilled.
