  • 0.5 tsp Salt
  • 1 cup Buttermilk substitute with regular milk mixed with vinegar
  • 0.5 cups Vegetable Oil melted coconut oil or unsalted butter can also work
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 0.5 tsp Peppermint Extract
  • 1 cup Mini Chocolate Chips swap for dark chocolate chunks for a richer experience
  • 0.5 cups Crushed Peppermint Candies optional for topping

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it well.
  2. Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl until well combined.
  3. Mix buttermilk, vegetable oil, egg, vanilla extract, and peppermint extract in a separate bowl until smooth and well combined.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined; be careful not to overmix!
  5. Fold in the mini chocolate chips carefully, ensuring they are evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Sprinkle crushed peppermint candies on top, if desired, for an extra festive touch.
  8. Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.
