  • 3 cloves Fresh Garlic Mince finely
  • 1/4 cup Unsalted Butter Melted
For Extra Flavor
  • 1 tablespoon Fresh Thyme or Rosemary Use fresh for best flavor
  • 1 tablespoon Fresh Lemon Juice Squeezed just before serving

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Prepare the carrots by washing and peeling them, then cut into uniform pieces about 1 to 1.5 inches long.
  3. Mix together melted unsalted butter, honey, minced garlic, salt, black pepper, and fresh herbs in a large bowl.
  4. Toss the carrot pieces in the honey garlic butter mixture until well coated.
  5. Spread the carrots out in a single layer on a baking sheet.
  6. Roast for about 25-30 minutes, stirring halfway through.
  7. Squeeze fresh lemon juice over the roasted carrots just before serving.
