How to Make Pineapple Chicken and Rice
- Heat the oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper, cooking until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
- In a bowl, whisk together the pineapple juice, soy sauce, honey (or brown sugar), cornstarch, minced garlic, and grated ginger if using.
- Add the pineapple chunks to the skillet, then pour in the prepared sauce. Simmer over medium heat for 2-3 minutes until it thickens slightly.
- Return the sautéed chicken to the pan, tossing together until the chicken is well-coated with the sauce.
- Spoon the mixture over warm rice and garnish with green onions or sesame seeds.
