Preparation Steps
  1. Start by placing your Rice Chex cereal in a large mixing bowl. Set it aside while you get your delicious coating ready to keep it crisp and crunchy.
  2. In a gallon-size zip-top bag, combine the powdered sugar and pistachio pudding mix. Seal the bag tightly and shake well until it's evenly mixed and fluffy.
  3. Add the almond extract into the bag, seal it again, and shake to combine.
  4. In a microwave-safe bowl, melt the white chocolate melting wafers together with the butter. Heat in 30-second increments, stirring until melted and glossy.
  5. Pour the melted chocolate mixture over the Chex cereal. Gently stir to coat each piece evenly.
  6. Transfer the chocolate-coated cereal into the zip-top bag filled with the dry mixture. Seal the bag and shake vigorously until every piece is coated.
  7. Spread the coated mixture evenly onto a sheet of parchment paper. Allow it to cool completely before serving.
